Allergy free chicken meatball spaghetti recipe


Ingredients
Sauce
  • Cooking olive oil
  • ½ onion, diced
  • 1 stick celery, sliced
  • 1 x 800ml can of tomato
  • 40ml tomato paste
  • 1 zucchini, chopped
  • Handful celery leaves, chopped
  • ½ clove garlic, crushed and diced
  • Handful mushrooms, diced
  • ½ red capsicum, diced
  • Salt and pepper to taste
  • Oregano, marjoram and basil to taste
Meatballs
  • 700gm chicken mince
  • ½ cup cornflake crumbs
  • ½ cup quinoa flakes
  • 1 stick celery, finely diced
  • ½ onion, finely diced
  • ½ clove garlic, crushed and diced
  • Salt and pepper to taste
  • Oregano, marjoram and basil to taste
  • 2 tsp Orgran No Egg whisked with 60mls water until thick
  • Spray cooking olive oil
Noodles
  • Orgran corn or corn and rice noodles


Method
Sauce
  • Prepare vegetables and celery leaves.
  • In a large pot, add a dash of cooking oil and the onions and celery.
  • Cook on high until onions are clear.
  • Add tomato and tomato paste.
  • Add chopped vegetables, celery, herbs, salt and pepper.
  • Bring to the boil and then allow to simmer on a low heat.
  • Stir occasionally. 
Meatballs
  • In a large bowl, add the chicken, corn flake crumbs, quinoa flakes, herbs, salt and pepper to taste, onion, celery, garlic, and Orgran No Egg mixture.
  • Mix together with your hands until even.
  • Form balls to equal size and arrange on a board. If fights over served amounts are likely then ensure the number made is evenly devisable by the number eating.
  • Liberally spray your frypan with cooking oil and turn the heat to medium-high.
  • After the oil has heated, carefully place the chicken meatballs into the pan.
  • Turn occasionally as they cook using a long pair of tongs.
  • Once cooked they can be added to the sauce. If you do so and need to stir the sauce, fold the mix gently otherwise you may destroy all your efforts.
Serve
  • Serve on Orgran noodles.

Notes
  • We give celery leaves to birds to help with their arthritis. Celery pills are often taken by those suffering arthritis too. So add them in instead of parsley just for the benefits. Tastes lovely too.
