Allergy free chicken and apple curry recipe

Looks nicer with rice but when the husband is away rice isn't cooked. Technically rice is a cheat for me so I limit myself to rice flour and the very, very occasional laksa noodle (once in 3 years in very, very occasional and I do miss being able to have laksa more often). Anyway, this tastes wonderful and was a favourite of mine while growing up. I argue with the husband about the sultana addition every time I use this curry powder but when the husband is away... :)

Ingredients
  • 3 tbsps Nuttlex
  • 1 small onion, chopped
  • 2-3 apples, peeled, cored and finely chopped
  • 3 tbsps Orgran all purpose flour
  • 1 tbsp curry powder
  • 700g chicken breast, chopped to same size as the apple
  • 1 ½ cup hot chicken stock made from half a Massel vegetarian chicken ultracube
  • ½ cup goat’s milk
  • Handful sultanas (optional)
  • Salt and pepper to taste

Method
  • In a large saucepan over a medium-high heat saute the apple and onion in Nuttlex until tender.
  • Add the curry powder and saute for 1 minute more.
  • Add the flour and continue to cook another minute.
  • Add the sultanas, stock and milk and stir well to combine.
  • Add the chicken to the sauce.
  • Season to taste
  • Bring to the boil then reduce the heat and simmer until the chicken is cooked through and the sauce has thickened.
